Manuel started his apprenticeship in Sydney NSW, igniting his career in Asian infused cuisine, close to his heart being born in the Philippines & moving to Australia as a small child he still incorporates flavour, colour & Asian flair into many of his dishes.
Manuel's career flourished in 2012 where he headed multi-site operations in Sydney's affluent suburbs Eastern Suburbs & The Rocks. During this time Manuel experimented with French, Eurasian, Mediterranean, menus before entering the fine dining platform in 2016. Manuel has been runner up & finalist for the Restaurant & Catering Awards Australia in 2017, 2018 & 2021 for best new restaurant in a hotel, best restaurant in a club & chef of the year. Since owner operating & contract catering for hotel establishments in NSW & more recently Brothers Leagues Club in Far North Queensland, where he has settled with his young family for a more relaxed & family friendly lifestyle. Manuel began operating O'Sheas Machan's Beach in May 2022, where you can catch him few evenings a week! |
